Michael Cronnolly's Recipe for Poitin

Poitin still at Knock Cultural CenterHome brewing is a time-honored craft in many cultures.  In Ireland, home-brew is called poitin, or "pote-cheen".  Here, Michael Cronnolly describes his recipe for poitin.

Eventually, a transcript of the process will be provided here.  For now, you'll just have to listen carefully and take notes.  For Michael's recipe, 1 stone = 14 pounds.

This recipe was dictated into a hand-held cassette recorder.  You may have to turn your volume way up to hear it.  Also, you'll need RealPlayer to play this.  RealPlayer is available as a free download.
